Strawberry & Spinach Summer Salad
INGREDIENTS & INSTRUCTIONS —
MARINATE THE STRAWBERRIES: Combine the following, place in fridge -
½ pint strawberries, sliced or quartered
1 tablespoon sugar
1 tablespoon balsamic vinegar
MAKE HONEY ALMONDS: Combine the following, place in the oven, till almonds are slightly golden (about 10 mins at 300 degrees)
1 cup sliced almonds
1 tablespoon honey
MAKE VINAIGRETTE: Combine & blend —
2 tablespoons balsamic vinegar
½ cup olive oil
1 shallot
½ teaspoon salt
a handful of fresh mint leaves
ADD TO SALAD BOWL & TOSS:
1 container (washed) spinach
4 ounces goat cheese
Marinated strawberries
Toasted Almonds
Homemade vinaigrette
I added Trader Joes Spicy pecans for extra nuts for an extra spicy crunch!
