Roasted Beet Hummus
INGREDIENTS —
1 beet, roasted
1 can chickpeas drained
⅔ cup tahini
⅓ cup of lemon juice
2 garlic cloves
⅓ cup olive oil
1 teaspoon cumin
1 teaspoon kosher salt
INSTRUCTIONS —
Combine all ingredients in a food processor or blender
Blend until the consistency is to your liking (if hummus is too thick, add more lemon juice + olive oil & blend a bit more)
Serve with veggies and pita chips or anything else your heart desires!
Store in an airtight container in the refrigerator for 3-4 days
