Roasted Beet Hummus

Homemade hummus is super simple to make & tastes 100% better than store-bought. Omit the beet to make a classic hummus!

INGREDIENTS —

  • 1 beet, roasted

  • 1 can chickpeas drained

  • ⅔ cup tahini

  • ⅓ cup of lemon juice

  • 2 garlic cloves

  • ⅓ cup olive oil

  • 1 teaspoon cumin

  • 1 teaspoon kosher salt

INSTRUCTIONS —

  1. Combine all ingredients in a food processor or blender

  2. Blend until the consistency is to your liking (if hummus is too thick, add more lemon juice + olive oil & blend a bit more)

  3. Serve with veggies and pita chips or anything else your heart desires! 

    Store in an airtight container in the refrigerator for 3-4 days
