Tahini Caesar Dressing

This Tangy tahini dressing is a terrific alternative to the traditional caesar. Convert this recipe to vegan by substituting plant-based yogurt for the yogurt and using nutritional yeast instead of parmesan cheese.

INGREDIENTS

  • ¼ cup tahini

  • ¼ cup fresh lemon juice

  • ½ teaspoon lemon zest

  • 1 tablespoon plain yogurt or plant-based yogurt

  • 1 small garlic clove

  • 3 tablespoons extra virgin olive oil

  • ½ cup grated parmesan cheese

  • ¼ cup cold water

  • A dash of salt, pepper and cayenne, to taste

INSTRUCTIONS

In a blender or food processor, combine all ingredients and pulse until smooth (makes about 1 cup).
