Marinated Cucumber Salad

This cucumber salad is the perfect companion to any protein - It is a refreshing contrast to grilled fish, chicken, or steak and pairs nicely with roasted chicken and pan-seared salmon.

INGREDIENTS

  • 1 large cucumber, thinly sliced

  • ½ shallot thinly sliced

  • ⅓ cup rice wine vinegar

  • 1 tablespoon sesame seeds

  • ¾ teaspoon salt

  • ¾ teaspoon sugar

  • ¼ teaspoon red pepper flakes

INSTRUCTIONS

  1. Using a mandoline or knife, thinly slice the cucumber and shallots.

  2. Transfer to a medium-sized bowl and add the remaining ingredients. Mix until well combined.

  3. Refrigerate in an airtight container for at least an hour, or make it a day ahead and store it in the fridge.

    The cucumbers get tangier and more flavorful the longer they marinate!
