BBQ Chicken Pizza
BBQ Sauce: Start with your favorite BBQ sauce, I love to use sweet baby rays (it's a classic). The amount of sauce really depends on preference, so in my experience it's easier to opt from measuring this ingredient and add as much as you like.
Chicken: You will need 1-2 cups of chopped cooked chicken. 2 chicken breasts is plenty (depending how much chicken you like on your pizza, I make it so it's basically covered. Add a little bit of BBQ sauce to the chicken prior to layering it on the pizza dough (this prevents chicken from drying out).
Substitutes: Go meatless and swap chicken for porcini and portobello mushrooms.
INGREDIENTS —
1 pizza dough
1 tablespoon olive oil
1 garlic clove, minced
½ tablespoon herbs of Provence
½ cup (or more) plus a few tablespoons bbq sauce
1-2 cups cooked chicken (shredded or pulled)
2 cups shredded mozzarella cheese
1 red onion (caramelized or raw)
3 tablespoons chopped fresh cilantro
INSTRUCTIONS —
Heat oven to 450 degrees - line a baking sheet or pizza pan w/ a sheet of parchment paper
Roll out pizza dough
Lightly brush dough with olive oil, minced garlic & herbs of Provence (leaving 1/2 inch border for the crust area)
Spread BBQ sauce onto the dough in an even layer
Top with shredded or diced chicken, cheese & half of the caramelized onion (add more bbq sauce on top if you'd like)
Place into oven and bake for 20 minutes or until the crust is golden brown and the cheeses have melted
Let cool for a few minutes, then add more bbq sauce if you'd like and top with the remainder of the caramelized onions
Garnish with cilantro & serve!
